Type of Steel (Magnet or Non-Magnet)
More common magnetic stainless steel pots made of 201 steel are relatively cheap but tend to rust easily, especially in alkaline environments or after prolonged use. This type of steel is usually cheaper. Whereelse, Non-magnetic pots made of 304 stainless steel are more reliable, rust-free, no deformation as well. Such grade of steel can usually be differentiated by the level of impurities present; pure quality steel tends to have no traces of dull surface features such as minute pits or loss of shininess, conversly low-grade steel presents some of these. Induction thermal leaks as a phenomenon where the source of induction heat seems to escape the pot externally, is also a feature of bad quality induction cookware.
