The carcass of poultry after evisceration is chilling inside of screw
chiller which fill with chilled ice water (the cooling system is arranged
separately), the temperature of carcass drop down in short time. The
temperature of birds after evisceration is about 39 ℃,to inhibit the growth rate of spoilage
microorganisms and pathogenic microorganisms, so the temperature of carcass
body need to drop down in short time. The birds are rolling up and down in the
water by aerating, the heat of birds are exchanging heat averagely with the
chilled water, and reduce the temperature of birds. This kind of chilling model
is greatly effect on the birds flavor, appearance, meat quality and water
content.
